An easy and healthy one-dish meal made with fresh mushrooms, onions, salt-free Cajun seasoning, turkey sausage, rice, low-sodium chicken broth, and kidney beans.
1 cup sliced fresh mushrooms
1 cup chopped onion
1 tablespoon salt-free Cajun seasoning
10 ounces smoked turkey sausage, sliced
1 cup uncooked long grain white rice
3 cups low sodium chicken broth
1 can (15 ounce size) kidney beans, rinsed and drained (optional)
Heat a large skillet over medium-high heat. Add the mushrooms, onions, Cajun seasoning, and smoked turkey sausage. Cook, stirring frequently, for 5 minutes.
Add the rice, broth, and kidney beans to the skillet and mix well. Bring the mixture to a boil then reduce the heat to a simmer. Cover the skillet and cook for 20-25 minutes or until the rice cooked and the liquid has been absorbed.
Stir the Cajun sausage and rice and serve hot.

Not a terribly creative dish, but one that was filling and satisfying. Food without flair is something that we all need from time to time.

This recipe is not only tasty but it's a healthier Cajun-style recipe than most. It's low in sodium and fat but not low in flavor. It's basically ready in the amount of time it takes to cook the rice so it's a great busy day dinner. And with only one pan used, cleanup is a snap.

I followed the recipe but used hot chicken sausage and added sour cream on top of serving. I tried with out first then second helping tried sour cream and it made it even better than before. I will definately be cooking this again. so yummy

Really good! I've made this twice, first time using white rice, and second time using brown rice (which I prefer) Both times I omitted the mushrooms because my husband doesnt like them, but Im sure they are 10 times better with them. I use pinto beans rather than kidney beans. I'll be making this over and over again.

My kind of meal. I didn't a cajun seasoning, but I had creole seasoning. Think its almost the same except this had salt in it. I added a little cayenne in it. Thought it was delicious. Definetly keep this recipe.

Had some Turkey Sausage I needed to cook for lunch and tried this recipe. I substituted Red Beans & Rice for the rice & kidney beans, otherwise followed the original recipe. It was fantastic! My boyfriend also loved it!

Was having a last minute dinner party around the pool and had some turkey sausage... found this recipe and everyone wanted a copy of this meal... Easy, basically healthy, and all loved it... I suggest this for everyone.
