Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
1 pint vanilla ice cream (softened)
1/2 stick butter (softened)
1/3 cup brown sugar
2 teaspoons cinnamon
1 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1 quart apple cider
directions
Cream butter, sugar and spices together. Beat in the vanilla ice cream. Re-freeze the mixture.
Scoop out the frozen mixture into a glass. Pour hot apple cider over the ice cream mixture.
Optional: Add an ounce of rum for an adult treat.

This is delicious!! I will make it again and again! It's a perfect winter drink, but that won't stop me from having it in the summer! :)
