Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I can't drink dairy products, so I did make some changes to the recipe, but I loved this milk. Just so you know, it tastes great made as directed with a coconut/almond milk mix. I am not overly fond of honey in drinks, so also swapped it out for maple syrup. I never use a microwave, so heated this on the burner. It just takes a minute or two to get the milk steamy. This drink is very comforting and enjoyable. Thanks for the idea!

This is a fantastic and simple recipe for anyone who wants a quick, healthy, comforting hot beverage! It really does taste like the vanilla equivalent to hot chocolate, but it's much healthier and less rich, for those of us who prefer more subtle flavors.
