Slow Cooker Lime-Glazed Cornish Hens

ingredients
4 cornish game hens
1 package (8 ounce size) stuffing mix, plus ingredients needed to prepare
1/4 cup melted butter
2 tablespoons brown sugar
2 tablespoons lime juice
2 tablespoons dry white wine
2 teaspoons soy sauce
directions
Thaw hens, if frozen. Follow directions for stuffing mix.
Spoon stuffing into cavity of each hen. Mix butter with sugar, lime juice, wine, and soy sauce. Brush hens with sauce.
Place trivet in slow-cooking pot. For 3 1/2 quart crock, place hens on end, neck end down. Cover and cook on low for 5 to 7 hours. Brush with sauce once during cooking if possible.

I grew up spoiled in Pennsylvania Dutch country, the son of a long list of County Fair competitions winners. The doctoring I've done to this excellent base recipe is as follows... The base recipe sounded very good and got quite a few good reviews so I decided to try it and these are my mods for you to consider: My rule #1 in cooking is " The secret is in the sauce." You can't get me to not do tiny taste tests during cooking, especially with something new and this was new. I made the recipe for three hens and here's my two cents worth: Recipe as above but for 4 hens figuring it would yield a little extra sauce since I was preparing 3 hens in a large crock pot. I used light brown sugar and added an extra tsp since the lime flavor was too sharp on first taste test. Substituted chicken stock for the white wine and added 1tsp Jim Beam Bourbon Whiskey (knowing that alcohol is excellent for helping flavors blend) About a third of the glaze was used for the initial brushing but as some had commented, it was too thin in my opinion also. The remaining sauce was thrown in the microwave for 1 minute at a time on high and stirred briskly after each minute to check its consistancy and reduce it to a hot thin syrup ( about 5 minutes total... As not all microwaves are equal, I highly suggest the minute by minute method so as not to burn the brown sugar and stink up the whole house. Now the taste test... Perfecto NOW 5 BIG STARS !!! The soy sauce is shining through behind the lime which has also lost its "edge" that I noted earlier. I was raised on wet German stuffing and cannot stand Stove Top box mix in any of its variations, but here's the problem... I had a stroke in August 2015 and am currently limited to one handed food prep and needed something quite good and "easy". This was it!!! My remedy for Stove Top.... I used the 6oz box of ST Savory Herbs blend (best spice ratio in my opinion) and added 2oz of chopped pecans., then prepare as per box directions and your done. not as good as my own but WAY better than box! The three birds barely fit and as suggested placed new potatoes and baby carrots around them which I may have to remove for a minute to glaze midway through cooking (will not skip the glazing with the thickened sauce and will brush again just before serving). Because the veggies caused the birds to stand just a bit more upright, the tips of the drum sticks caused the lid to be open just a crack... easy fix... nylon net bag like that for onions placed on top with a couple pounds of baking potatoes ( net bag won't trap heat and potatoes stay room temp) That crock pot is FULL and there's gonna be leftovers... I hope so!!! It already smells great! Thanks again for an outstanding base recipe. This is our New Years Day dinner and may become a tradition.

Not having lime juice, I substituted lemon juice. I could barely taste it. I think the sauce should be thicker, so less of it will just run off the hens. Maybe a little flour or cornstarch? With more glaze taste, I'd raise the rating. Also, the poor little hens were lonely in the pot. Next time, I'll surround them with some carrots, potatoes, or other vegetables. Finally, I cooked them on low for 6 hours, and they fell off the bones but seemed nicely tender. Maybe 5½ hours is better.

This recipe is great! I'm making it for the second time today! Its easy and very tasty... I added potatoes and carrots to mine.. and also make a side of the sauce for later. Thank you!

I only cooked one for 4 hrs on high, but it turned out great! Really tasty and moist.

This was absolutely delicious. Admittedly I was a bit nervous about the sound of the glaze, but this turned out excellent. I'd suggest keeping it in for between the 6-7 hour mark, though, because 5 is a bit light...but that just might be my cooker. A definite must try!
