2 Cornish game hens, cut in half
salt and freshly ground black pepper
3 tablespoons butter
1 tablespoon lemon juice
1 cup apricot puree or preserves
1/2 cup orange juice
1/2 orange, zested
1 teaspoon ground ginger
1/4 cup honey
1 tablespoon grated onion
orange slices
Preheat broiler.
Arrange the game hens, skin side up, on broiler pan. Melt the butter with the lemon juice and brush birds with mixture. Sprinkle with salt and pepper to taste.
Broil 4 inches from heat until golden, basting with butter mixture. Turn and brush underside of hens with butter mixture. Broil until lightly browned.
In a saucepan, heat together apricot puree, juice, zest, ginger, honey, and onion, stirring until well blended.
Heat oven to 350 degrees F.
Transfer game hens, skin side up, to a buttered baking dish. Poor apricot sauce over them and cover the dish with foil. Bake for 40 minutes. Garnish with orange slices.

tried this for first time. Substituted mango jam and some dried apricots. Only used 1/8c of honey. Also added good chardonnay at the last ten minutes. We both enjoyed this and the chicken was moist, citrus-sy and slightly sweet.
