Drunken Cornish Hens

ingredients
4 rock Cornish game hens
4 tablespoons dark rum
1/4 cup lime juice
4 tablespoons honey
4 cloves garlic, minced
2 teaspoons salt, divided
1 teaspoon coriander
1 teaspoon black pepper
directions
Preheat oven to 350 degrees F.
Wash hens and pat dry.
Combine rum, lime juice, honey, garlic, and 1 teaspoon salt. Rub mixture all over hens and marinate in refrigerator for at least 30 minutes.
Transfer hens from marinade to a shallow baking dish and pour marinade over hens. Sprinkle skin of hens with salt, pepper and coriander.
Roast hens for about 35-40 minutes or until done and nicely browned, basting frequently with pan juices.
