The easiest set-it-and-forget-it chicken and rice because you don't even need to cook the rice separately. You can make it as colorful as you like with whatever spare veggies you've got lying around.

1 cup uncooked white rice 2 cups boiling water (or broth) 1 can (10 ounce size) cream of chicken soup, undiluted 1 can (10 ounce size) cream of mushroom soup, undiluted 1 envelope dry onion soup mix 2 boneless, skinless chicken breast halves 1/2 teaspoon paprika Colorful Add-Ins 1 large carrot, sliced thin 1 cup cut-up fresh green beans 1 medium green bell pepper, chopped 1 cup canned or frozen corn, drained
directions
Place the raw rice in the bottom of the crockpot. Stir in the water. In a bowl, mix together the cream soups and onion soup mix until well blended. Pour over the rice.
Add whatever vegetables you wish on top of the rice mixture. Place the chicken breasts on top and sprinkle with paprika.
Cover the crock pot and cook on low heat for 3-4 hours or until the rice has absorbed the liquid and is tender and the chicken is cooked through.

Delicious. Everyone ate this up, including our two-year-old daughter. We used corn and carrots. Everything was finished in our slow cooker in 2 1/2 hours, except the carrots. Would add some salt at the end. Would definitely make again!
