If you feel like the takeout boxes of sweet and sour pork are never enough, make a big batch of this in your crockpot.
2 pounds lean pork tenderloin, cubed
2 tablespoons cornstarch
3 tablespoons soy sauce
1/4 cup cider vinegar
1 small red onion, cut in chunks
1/4 teaspoon ground ginger
1/4 cup packed brown sugar
2 green bell peppers, seeded and cut into strips
2 tomatoes, cut in chunks
Toss the pork and cornstarch together until the pork is evenly coated. Place the pork in the crock pot.
Add the soy sauce, vinegar, onion, ginger, and brown sugar to the crock pot. Stir gently.
Cover the crock pot and cook on low for 3-4 hours.
Turn the crock pot to high heat. Add the green pepper and tomatoes and stir gently. Cover again and cook on high heat for 10-20 minutes or until the vegetables are crisp-tender.
Serve the pork and vegetables over rice, if desired.

I used a 2.2 lb.pork tenderloin cut into about 1" pieces. I followed the directions exactly. After 3.5 hours on low pork was falling apart tender and there was plenty of liquid. I didn't have green pepper so used 1 red and 1 yellow pepper cut into 1" pieces and 2 large Roma tomatoes. I think it needed slightly more vinegar and a little salt but it was delicious.

I agree with one of the reviews i read, 3 hours into the slow cook, it needed liquid. I added some stock so I suggest if you make this to be prepared for this! Tasty and I'm pleased with the final result!!! Will definitely make again.
Very disappointed. I put everything in my crock pot as per your recipe and set for 6 hours. At 3 hours remaining I went outside to do snow removal. Came in with 1.5 hours remaining and smelled something burning. Sure enough, everything was burned. What to do with it now?
Not all crock pots cook at the same heat level unfortunately. Sounds like you have one that cooks "hot". I would cook on WARM temp instead of LOW in that case (if your unit has the warm setting) or keep your eye on a recipe the first time you try it.

We loved this recipe. I wasn't so sure about the tomato- but everything was so good! I have a big crock pot- so I found I had to add a little water 4 hours into cooking to make sure it didn't dry out too much, and I only put in 2 tbs of soy sauce as I don't like things salty. Other than that this is awesome!

Delicious! I made a few minor substitutions based on the ingredients I had available (Balsamic instead of Cider vinegar, and golden instead of dark brown sugar), but it came out wonderful! The pork was so tender and tasty, it just fell apart. And it was just as good for leftovers a couple days later, too! (I made an open-faced pulled pork "sandwich" for lunch, and that was fantastic too!)

I Used serloin tips for this recipe.........it was melt in your mouth delicious!!! Easy and quick too!
