You've had cocktails with dinner, but what about mixing a cocktail into your dinner? This inventive rum and Coke marinated pork absolutely pulls it off.

serves/makes:

ready in:
  over 5 hrs

ingredients

1/2 cup kosher salt
1/2 cup brown sugar
1/2 cup rum
3 cups cola (not diet)
1/2 cup honey
1 pound pork tenderloin

directions

Combine the salt, sugar, rum, cola, and honey in a ziptop plastic bag or other container. Mix well until the sugar has dissolved.

Place the pork tenderloin in the rum and coke marinade, seal the bag (or cover the container) and place the pork in the refrigerator for 8-12 hours (or up to 24 hours).

Preheat a grill to medium heat.

Remove the pork from the marinade (discard the marinade). Slice the pork tenderloin into 2-inch thick slices.

Place the pork on the grill and cook for 5-7 minutes per side or until the pork registers 145 degrees F on a meat thermometer.

Remove the pork from the grill. Let the pork stand, lightly tented with foil, for 5 minutes before serving.

recipe tips

Make sure the pork is fully submerged in the marinade for even flavoring.

Turn the pork occasionally while marinating so all sides are seasoned.

Let the pork come to room temperature before grilling for more even cooking.

Oil the grill grates to prevent sticking.

Avoid overcooking the pork to maintain its tenderness and juiciness.

Resting the pork after grilling allows the juices to redistribute for better flavor.

For added flavor, consider adding spices like garlic powder or paprika to the marinade.

Basting the pork with a little honey or a mixture of rum and cola during the last few minutes of grilling can add a caramelized glaze.

Serve with sides that complement the sweet and savory flavors, like grilled vegetables or a fresh salad.

Experiment with different types of honey for varying sweetness and depth.

If you prefer a spicier kick, add a small amount of cayenne pepper or hot sauce to the marinade.

For a smokier flavor, add a bit of smoked paprika to the marinade.

Keep a close eye on the grill as the sugar in the marinade can cause the pork to burn easily.

Garnish the finished dish with fresh herbs like parsley or cilantro for a burst of freshness.

common recipe questions

Can I use a different type of alcohol instead of rum?

Yes, you can use bourbon or whiskey for a different flavor profile.

Is it okay to use diet cola for the marinade?

It's best to use regular cola as diet cola may not yield the same flavor and can react differently when cooked.

How long should the pork marinate for optimal flavor?

Marinating for 8-12 hours is ideal, but you can marinate up to 24 hours for deeper flavor.

Can I marinate the pork for longer than 24 hours?

Marinating longer than 24 hours might result in the meat becoming too soft or the flavors becoming too overpowering.

Is there a way to make this recipe without a grill?

Yes, you can cook the pork in a skillet over medium-high heat or roast it in the oven.

What can I do if I don't have a meat thermometer?

Without a thermometer, cook the pork until the juices run clear and the meat is no longer pink inside.

Can I reuse the marinade for anything else?

It's not recommended to reuse the marinade due to contamination risks. Always discard used marinade.

How can I tell when the pork is properly cooked?

Pork is done when it reaches an internal temperature of 145 degrees F and has a slight pinkness in the center.

Can I slice the pork tenderloin before marinating?

It's best to marinate the pork whole to maintain moisture and then slice it before grilling.

Is there a non-alcoholic substitute for the rum in the marinade?

For a non-alcoholic version, you can use apple cider or a mixture of pineapple juice and a bit of liquid smoke.
