ingredients
3 cloves garlic, minced
1 teaspoon ground cloves
1 teaspoon ground coriander
1 teaspoon cumin
1 teaspoon coarsely ground black pepper
2 1/2 pounds boneless pork loin
1 can (15 ounce size) chili without beans
1 1/2 cup water
3 medium onions, cut into 1" pieces
thin strips of lemon zest
directions
Heat the oven to 350 degrees F.
In a small bowl, combine the garlic, cloves, coriander, cumin, and pepper. Rub the mixture on the pork loin. In a roasting pan, combine the chili and water. Place the pork loin on the chili mixture. Place the onions around the roast. Cover and bake 1 hour.
Uncover and baste. Continue baking, basting occasionally, 1 hour or until a meat thermometer inserted near the center reaches 165 degrees F.
Serve the sliced pork with the chili and onions. Garnish with the lemon zest.
