Bacon and Cheese Breakfast Strata

ingredients
1 pie crust (9 inch), unbaked
1/2 pound bacon, cooked and crumbled
8 ounces Swiss cheese, shredded
4 eggs
12 ounces sour cream
2 tablespoons fresh parsley, chopped
directions
Roll pastry thin to fit into a 12" pizza pan. Bake at 425 degrees F for 5 minutes.
Sprinkle bacon and cheese evenly over crust.
In a bowl, beat eggs, sour cream and parsley until smooth; pour over pizza. Bake for 20 to 25 minutes or until pizza is puffy and lightly browned.
Can also use refrigerated biscuits or crescent rolls as pizza base. Roll out to fit pan and bake as as directed above.

My kids love this recipe! I can easily hide veggies under the eggs (spinach,shredded peppers/carrots, mushrooms, tomato) and they they eat it up! I also have used crumbled sausage instead of bacon. This is a great, quick recipe for breakfast or dinner. We use it for overnight guests and they are always pleased.
