This Amish casserole is unsurprisingly simple and delicious. Fried bacon and onions with eggs, hash browns, and three types of cheese is filling enough to feed a village.
1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1 1/2 cup cottage cheese
1 1/4 cup shredded Swiss cheese
Preheat the oven to 350 degrees F. Grease a 13x9 baking dish.
Heat a large skillet over medium heat. Add the bacon and onion and cook until the bacon is cooked, stirring frequently. Drain the excess grease and place the bacon mixture in a large bowl.
Add the egg, potatoes, Cheddar cheese, cottage cheese, and Swiss cheese to the bowl and mix well. Transfer the mixture to the prepared baking dish.
Bake at 350 degrees F for 35-40 minutes or until the egg is set. Remove from the oven and let stand for 5-10 minutes before cutting into squares and serving.

Drain the bacon and onion well to remove excess grease.
Thaw the hash browns completely or the casserole may become watery.
Bake until the center of the casserole is set.
