It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

These scrumptious squares are kind of like quiche you can eat with your hands. Perfect for brunch. Throw a fried egg on top of the leftovers for an easy, cheesy breakfast.
2 cups baking mix (such as Bisquick)
1/2 cup cold water
8 ounces sliced Swiss cheese
1 pound sliced thick bacon, cooked and crumbled
1 small onion, thinly sliced
4 eggs, lightly beaten
1/4 cup milk
Preheat the oven to 425 degrees F.
Combine the baking mix and cold water in a bowl and mix for 1 minute with a spoon. Turn the baking mix dough out on to a lightly floured work surface. Knead the dough 10 times. Roll the dough out to a 10x14-inch rectangle using a rolling pin. Carefully transfer the dough to a 9x13-inch baking dish, pressing the dough up the sides about 1/2-inch.
Place the Swiss cheese slices evenly over the bottom of the crust. Sprinkle the cheese with the crumbled bacon and sliced onion.
In a bowl, whisk together the eggs and milk. Mix until uniform in color. Pour the egg batter over the bacon and onion.
Place the baking dish in the oven and bake at 425 degrees F for 15-18 minutes or until set and a knife inserted in the middle comes out clean.
Remove the bacon Swiss squares from the oven and let cool for 1 minute before slicing and serving. Best served immediately.

I diped my pizza in salsa really added some spunk to it and kept it from being too dry.

I really enjoyed this recipe. I reduced it to 5 servings and it turned out wonderfully! My only complaint is the amount of time it said to cook the dish was too short. I had to cook it for 20-25 minutes to make sure the eggs were fully cooked.
I used to make this recipe often (especially when we had overnight guests) and always received rave reviews. I lost it in a move and could never find it again on the newer boxes of Bisquick. I searched the Internet off and on and was thrilled to finally locate this recipe again. Thank you!
