One of our favorite Easter desserts is this coconut cream cake made from a cake mix. It's moist, fluffy, and has the perfect hint of coconut flavor. Plus, it's super easy to make.

1 package (18.25 ounce size) French vanilla cake mix 1 container French vanilla frosting 1 can cream of coconut 1 package shredded coconut food color (optional)
directions
Prepare cake mix as directed on box. When cake is done, remove from oven and poke holes in it with a straw. Pour cream of coconut into holes while cake is still hot.
Let cake cool to room temperature and then frost. Pour coconut over whole cake. Food color is in case you want to color the coconut.
