Simple grilled chicken infused with lime and tequila flavors, layered on a bed of crunchy tortilla chips. Ready in under 30 minutes, this copycat recipe is an easy weeknight dinner solution.

Chicken
1 (5 ounce size) boneless skinless chicken breast half
1/2 cup lime juice
1/4 cup tequila
1/2 cup tortilla chips
1/4 cup shredded Cheddar jack cheese
Mexi-Ranch Dressing
1 tablespoon salsa
3 tablespoons ranch salad dressing
Set oven to broil.
To prepare chicken, pour lime juice and tequila into a sealable plastic bag. Place chicken in bag and chill. Marinate chicken overnight.
Mexi-ranch Dressing: in a small bowl mix the ingredients together.
Remove chicken from marinade and grill over medium heat 10 minutes or until thoroughly cooked.
To assemble: Scatter tortilla chips on an oven-safe plate. Place chicken on top of tortilla chips. Pour Mexi-ranch dressing over chicken. Cover with the shredded Cheddar jack cheese. Place chicken under the broiler until cheese is melted. Be careful, plate will be hot!
Serve with pico de gallo and Spanish rice on the side.

I was afraid that the tequila would be too strong in the marinade but it wasn't it was the right amount and left some flavor on the chicken but it wasn't overwhelmingly boozy or anything. I think the lime juice definitely counteracts that so it turned out very good. It also did a really good job of tenderizing the chicken.

I fixed the "Applebee's Fiesta Lime Chicken" I can't even find that on here now but it was excellent everyone in my family liked it. That is what I always order when we go there and it was just as good (if not better)when I fixed it at home. It does take a while just because of the time to marinade it but it is well worth it. Thanks

Both my Husband and I loved this Chicken. I did not have any Tequila in the house so I used Vodka, still worked. Since we are eating sugar free I also substituted Splenda for the sugar and added a bit of molasses.
