This delicious chicken salad is no longer on the menu at Applebee's. But, you can still enjoy it at home with this copycat recipe.

2 boneless chicken breasts
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 can (15 ounce size) black beans, rinsed and drained
1 can (8 ounce size) sweet corn, well drained
1/2 purple onion, chopped
2 cups tortilla strips
1 pound mixed greens salad mix
4 ounces grated pepperjack cheese
1 cup Catalina salad dressing
1 teaspoon tabasco (or to taste)
Season the chicken breasts with fajita seasoning. Grill the chicken breasts (or pan-sear) until cooked. Let the chicken breasts stand for 5 minutes then slice.
Combine the bell peppers, black beans, corn, onion, tortilla strips, and salad mix in a bowl and toss to combine.
Combine the Catalina dressing with the tabasco and mix well. Stir the dressing into the salad. Divide the salad between individual salad bowls. Top with the cheese and chicken.
Serve the Aztec chicken salad immediately.
Use fresh ingredients for the best flavor, particularly the vegetables and greens.
For added flavor, marinate the chicken in the fajita seasoning for several hours or overnight.
Add a squirt of lime juice to brighten the flavors of the salad.
Make sure to rinse canned beans and corn thoroughly to remove excess sodium and improve flavor.
If you want an extra kick, add diced jalapenos or a sprinkle of chili flakes to the salad.
Always check the seasoning before serving; a little salt or pepper can improve the overall flavor.
To save time, use a store-bought rotisserie chicken instead of grilling chicken breasts.
Serve the salad on chilled plates for an extra refreshing meal.
Boneless, skinless chicken breasts are recommended for ease (just grill and slice). You can use bone-in if needed. We recommend boning before grilling.
You can use a different dressing such as ranch, cilantro-lime, or a spicy vinaigrette. The Catalina is what Applebee's uses so a different dressing will alter the flavor from the original recipe.
You can bake the chicken breasts at 375 degrees F for about 20-30 minutes depending on their thickness, until the internal temperature reaches 165 degrees F.
You can substitute black beans with other beans like kidney beans or pinto beans, or use chickpeas for a different texture and flavor.
Feel free to add other vegetables such as avocado, cherry tomatoes, or cucumbers.
You can prepare the components in advance, but it's best to combine the salad and dressing just before serving to keep the greens crisp.
Leftovers can be stored in an airtight container in the refrigerator for 1-2 days, but the salad may become soggy over time.
It is not recommended to freeze this salad, as the texture of the greens and dressing will deteriorate upon thawing.
You can substitute pepperjack with Monterey Jack, cheddar, or even a plant-based cheese.
Grill or Large Skillet: For cooking the chicken breasts until they are fully cooked. A grill provides a smoky flavor, while a large skillet can be used instead for pan-searing. A grill pan can also be used.
Measuring Cups and Spoons: For measuring the ingredients such as the Catalina salad dressing and tabasco.
Cutting Board and Knife: To prepare the chicken and vegetables.
Mixing Bowls: A large bowl to combine the bell peppers, black beans, corn, onion, tortilla strips, and salad mix. Another bowl to combine the Catalina dressing and tabasco before adding it to the salad mixture.
Tongs or Spoon: For tossing the salad ingredients together and serving the salad.
Avocado Slices: Adding slices of avocado can introduce creaminess that balances the acidity of the salad dressing. Avocado also adds healthy fats, making the meal more satisfying.
Sour Cream: A dollop of sour cream on the salad can counterbalance the heat from the Tabasco and add a rich creaminess.
Chipotle Ranch Dressing: Offer chipotle ranch as an alternative dressing for those looking to spice things up. The smoky flavor will play well with the grilled chicken and pepperjack cheese.
Pico de Gallo: Fresh pico de gallo can serve as a topping or side. Its freshness brightens the dish and adds a burst of flavor.
Tortilla Chips with Queso Dip: For something additional to munch on, serve tortilla chips with a creamy restaurant-style queso dip.
Wine Pairings
Sauvignon Blanc: This refreshing white wine has bright acidity and herbal notes that complement the fresh ingredients of the salad. Look for crisp varieties that have hints of citrus.
Chardonnay: A lightly oaked Chardonnay brings in some buttery texture and a hint of spice, making it a perfect match for the richness of the chicken and pepperjack cheese. Choose one that's dry and has apple or pear notes.
Malbec: If you prefer red, a fruit-forward Malbec with berry flavors will work well with the grilled chicken while handling the richer components, like the cheese and beans. Look for one that's bold but not overly tannic.
Other Alcohol Pairings
Margarita: A classic margarita with fresh lime juice and a touch of orange liqueur can brighten up the meal.
Chili Beer: A light chili-infused beer or a spiced lager offers a fun twist that adds a bit of heat without overwhelming the salad.
Tequila Sunrise: This fruity tequila sunrise adds a touch of sweetness with orange juice and grenadine, complementing the vibrant flavors of the salad while giving it a fun, festive feel.
Non-Alcoholic Pairings
Lemonade: A refreshing glass of lemonade balances the hearty ingredients with a bit of tartness. Choose one that's made with real lemons for best flavor.
Iced Herbal Tea: A chilled hibiscus or fruit-infused herbal tea enhances the salad's flavors with its natural sweetness and fruity notes while being nice and refreshing alongside the meal.
Sparkling Apple Drink: A sparkling apple or apple cider drink adds a bit of sweetness and fizz that pairs beautifully with all the ingredients in the salad.
