Cheesecake and apple pie filling are sealed inside flour tortillas and deep fried. Tastes just like Applebee's famous dessert!

Cheesecake filling (favorite home-made recipe or instant package mix)
apple pie filling
Pressed 10" flour tortillas
cinnamon sugar
caramel topping
vanilla ice cream
Prep cheesecake filling. Fold in desired amount of apple pie filling (recommend no more then equal to one-quarter of cheese cake mix). Warm tortilla slightly in microwave. Spatula mix onto tortilla in rectangle form, offset from the middle. Fold sides in first, bottom second, and roll to top. Ensure that it is sealed all the way around. Roll in wax paper and freeze.
When ready to prepare/serve, remove fully frozen chimi and fry immediately in 350 degrees F oil for approximately three to four-minutes. Remove from oil allow to drain. Roll in cinnamon sugar. Cut in half on an angle. Serve in a puddle of caramel and a scoop of vanilla ice cream.

I had made a cheesecake that was just "ok" (nothing special). Used half of it in this recipe and we loved it! Used the apple pie filling but I think any pie filling would be fantastic. You do have to just wing it for the measurements but it's not hard to figure out once you start making it how much to use.

This was hard to follow because there were no measurements. I had to just wing it and even though it turned out tasty, it would have been less frustrating to have actual measurements to use. I give it 5 stars for flavor but 3 overall.

I made these years ago, took me a while to find this recipe again w/o the apples inside. My family loves these. This is the real deal, just like at Mexican restaurants!

This recipe is the closest to the real thing. My husband LOVED it. He even sold them at work and they keep asking me to make more. Not as difficut as posted it was very easy, I made it with my 5 year old. Use Philadelphia Ready to eat cheesecake filling it taste the best in this recipe.
