It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A homemade version of the popular apple turnovers from the Arby's fast food chain. Made with puff pastry sheets, apples, sugar, and cinnamon and drizzled with a sugar glaze.
1 package puff pastry sheets
4 large cooking apples
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
Sugar Drizzle
1/2 cup confectioners' sugar
1 tablespoon water
Peel, core and slice apples. In medium saucepan over low heat, cook apples with sugar, cornstarch, lemon juice and cinnamon, stirring frequently, until apples are tender. Refrigerate until cool.
Thaw pastry sheets at room temperature 20 minutes.
Preheat oven to 400 degrees F.
Unfold pastry on lightly floured surface. Roll each sheet into a 12-inch square and cut into four 6-inch squares. Place 1/4 cup apple mixture in center of each square. Brush edges with water. Fold to form triangles, seal edges firmly with a fork.
Place on 2 baking sheets. Bake 25 minutes or until golden. Cool on wire rack.
For Sugar Drizzle: In small bowl, mix together confectioners' sugar and water. With spoon, drizzle on turnover, allow to set before serving.

I've made this recipe several times with multiple variations. I've used pears in stead of apples, apple or other pie fillings, even pineapple one time. Super easy recipe and they can be frozen once made and reheated as needed.

I make these at least once a week, and they are yummy! You don't need to keep buying most of the ingredients except for the Granny Smith apples, and the Puff Pastry sheets. And to make more at one time, just cut more squares out of the pastry sheets. I add Cream Cheese frosting on the top too!

While I can't compare the authenticity of this recipe to what is served at Arby's, I can say these are quite tasty!
If you don't feel like making these it is possible to buy them at the grocery store. I asked an employee once and they told me that Arby's uses the same Pepperidge Farms apple turnovers that you can buy in the freezer section of most supermarkets.
