Apricot Chutney
INGREDIENTS:
6 ounces package dried apricots, diced
2 tablespoons finely diced crystalized ginger, packed
1 cup halved seedless golden raisins
1/2 lemon, finely diced
3/4 cup chopped onions
1 1/2 cup sugar
1/2 cup plain white wine vinegar
2 cloves garlic, crushed or minced
1 1/2 teaspoon dry mustard
1/8 teaspoon hot pepper sauce
1/2 cup tomato juice
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
DIRECTIONS:
Mix all ingredients together. Bring to a boil; lower heat and cook gently to desired thickness.
