Apple Pear and Mango Chutney

ingredients
2 cups red onion, diced
1/2 cup cider vinegar
3/4 pound light brown sugar
2 cups apple, diced
2 cups pear, diced
1 teaspoon curry powder
1 cup mango, diced
directions
Place red onion, vinegar and brown sugar in a stainless pot and bring to the simmer and cook for 30 minutes (or until syrupy).
Add diced apples, pears and curry powder and cook for a further 20 minutes (or until syrupy). Remove from the heat and add mango.

This went really well with my pork chops. I added raisins, curry leaves and whole cloves.

Tasted good - a nice subtle blend of flavors. I added a cup of raisins, and cooked it about 10 minutes longer. It should be a good side accent for various meats.
