Slow Cooker Red Beans and Sausage

ingredients
1/4 teaspoon white pepper
4 cloves garlic, minced
1 pound red beans, soaked overnight
1 pound andouille sausage, sliced
1/4 teaspoon red pepper
2 bay leaves
1 onion, chopped
2 cups water
directions
Place soaked beans in crockpot. Add seasonings and top with meat. Pour water over all. Cover, cook on low for 8-10 hours.

I'm not sure if it was me or a problem with the recipe, but this didn't turn out very well. I think maybe cooking for a little less time might have helped. The flavor cooked right out of the sausage and I would have liked a little more flavor. I honestly think cooking for less time would have helped - or with a bit more liquid...
