ingredients

2 cups dried white navy beans (Great Northern type)
4 teaspoons salt
1/4 teaspoon black pepper
2 cloves garlic, pressed
2 bay leaves
2 cups onions, finely chopped
1 green bell pepper, finely chopped
1 can (1 pound size) tomatoes, undrained
1 teaspoon diced dried oregano
1/4 cup chopped parsley
OR
1 tablespoon dried parsley
1 pound browned hamburger (optional)

directions

Cover beans with cold water; refrigerate covered overnight.

Drain beans and cook in kettle with 5 cups water, salt, pepper, garlic and bay leaves for 1 1/2 hours. Stir several times.

Drain. Put in crock pot. Add onions, peppers, tomatoes, oregano and parsley to beans. Cook on low for 5 to 6 hours or until beans are done.

This makes a nice side dish. Can be made more of a main dish by adding the hamburger.

    Apologues for making recipe changes. Made as read and making comments. This is not the old navy brat way of making navy beans but works quite well. Rather than adding hamburger, we add salt pork or hog jowl. Fatter I admit, but with the crockpot it can be skimmed off and adds a lot of flavor. Adding the tomatoes are a plus but the herbs and spices are all that are necessary. Can turn to BBQ by adding BBQ sauce. Why the navy uses it. It can be changed by what is available. Good stuff Maynard.

    First time working with dried beans. Turned out perfect. I didn't add the beef. I like the suggestion of adding smoked sausage so I might do that next time to change it up a bit.
