Butterbean Casserole or Baked Lima Beans

ingredients
4 cans small butter beans or lima beans, drained and rinsed with cold water and drained again, (do not use large limas or fordhook limas)
1 vidalia or other sweet onion, chopped small
1/2 cup chopped celery (strings removed)
1 sweet red or green bell pepper, seeded, chopped
1 clove garlic, crushed, peeled, finely chopped (optional)
2 tablespoons butter, melted, more if desired
2 teaspoons bacon drippings (optional)
Sauce
8 ounces plain tomato sauce
2 tablespoons granulated sugar, to taste
1/2 teaspoon table salt, to taste
1/8 teaspoon black pepper
1/2 teaspoon paprika (optional)
Topping
1/2 cup grated sharp Cheddar cheese
1/2 cup Ritz Crackers or Ritz Cheese Crackers, crumbled
4 tablespoons butter, melted, for drizzling on top

butter-flavored cooking spray
directions
Reserve butter beans. Saute onions, peppers and celery in butter and bacon drippings over low heat until soft. Add garlic (optional), tomato sauce, paprika, sugar, salt and black pepper. Simmer for 10 minutes. Combine beans and sauce mixture in a 9x13 baking dish or pan. Bake at 350 degrees F for about 25 minutes.
Add Topping: Top with the grated cheese. Cover with crumbled Ritz cracker crumbs. Drizzle with melted butter. Bake at 350 Degrees F. until sauce thickens and topping is golden brown-about 20 more minutes.
