Slow Cooker Mexican Red Beans

ingredients

1 pound dried red beans
4 cups cold water
1 large onion, coarsely chopped
1 can (16 ounce size) diced tomatoes, drained
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon crushed red pepper
2 teaspoons salt
1/4 pound salt pork or bacon, chopped (optional)

directions

Soak the beans overnight in water. Rinse and drain.

Add the beans, cold water, and remaining ingredients to the crock pot.

Cover the crock pot and cook on high for 2 hours. Stir again. Reduce the heat to low and cook for 8 hours or until the beans are tender.

Adjust the seasoning as needed before serving.
