ingredients
1 pound uncooked, dried pinto beans
8 cups water
1/2 pound bacon, diced
1 can (14.5 ounce size) tomatoes, undrained
2 medium onions, chopped
2 cloves garlic, minced
1 can (4 ounce size) diced green chilies
1 teaspoon chili powder
1/2 teaspoon dried oregano, crushed
1/4 teaspoon cumin
salt
fresh oregano for garnish
1 cup beer
2 limes
directions
Sort beans. Place beans in bowl, cover with water and soak overnight.
Discard water. Place beans in large pot and add 8 cups water. Simmer partially covered for 1 hour.
Cook bacon until crisp. Add bacon and 2 Tbsps of the drippings to beans. Chop tomatoes and add to beans. Add onions, garlic, chilies, chili powder, oregano, and cumin. Simmer partially covered for three hours, or until beans are tender.
Turn off heat and add beer. Season with salt to taste. Garnish with fresh oregano and lime wedges.

This is Barb: Muffy you need to cover beans by 2 inches of water bring to boil for 3 minutes then let soak for 1 hour drain and rinse.Repeat and let set for 10 minutes rinse and drain.Then cook as usual.That will take the bitter out and remove a lot of the gas. Hope this helps.
the beans in this recipe turned out perfect but they had a bitter taste. I followed the recipe. It sounds exactly like what I'm looking for if someone could tell what the bitter is
