Beans, beans, they're good for your heart - and a whole lot more. This instant refried beans mix packs a punch when it comes to flavor and convenience.

3 cups dried beans, any variety
1 tablespoon cumin
1 tablespoon chili powder
1 tablespoon salt
1 tablespoon dried minced onion
cayenne pepper, to taste
In a coffee grinder, food mill or blender, grind beans until a flour consistency. Mix all ingredients together until they are well blended. Store in a large airtight container or jar.
TO USE: 3/4 C. Instant Refried Bean Mix 2 1/2 cups boiling water
Combine bean mix and water in a medium-sized saucepan. Mix with a wire whisk until combined. Don't worry about the lumps, they are tasty and add texture to your beans.
Bring to boil, cover, reduce heat to low and simmer for 4-5 minutes or until thickened. Mixture will thicken more as it cools. Refried beans will remain thickened even when reheating.

This sounds so good. I tried making it this morning and have cooked the beans for 45 minutes and they are still not done. What am I doing wrong? Also, can the cooked beans be frozen for future use?
Not done as in... not thickened? Unless the beans were old before pulverizing them they should definitely thicken up within 45 minutes. And yes, the cooked refried beans can be frozen.

I can't stand canned refried beans but I don't always have time to soak beans so I make this quite regularly and replenish my supply. To cook them I follow the directions but then instead of simmering I put it in a mini crock pot and let it heat and thicken while I cook the rest of our meal (doesn't take long if you preheat the crock).
