2 cups Brussels sprouts, quartered and cooked al dente 2 teaspoons oil 1 red onion, chopped 1 small can mandarin oranges, drained 1/2 cup julienne ham 1 tablespoon apple cider vinegar salt and pepper, to taste
Cook Brussels sprouts and set aside.
In a large fry pan heat oil. Saute onions until translucent. Add ham and cook for another 2-3 minutes. Add Brussels sprouts, oranges, cider vinegar, salt and pepper. Heat through and serve.
