Fried Breaded Brussels Sprouts

ingredients
20 ounces Brussels sprouts
1 1/2 cup unbleached flour
1 1/2 cup bread crumbs
4 eggs, beaten
OR
6 egg whites
salt
black pepper
garlic, minced
olive oil
directions
Trim the sprouts, cut in half length wise. Bring water to a boil and blanch the sprouts for about 4 minutes to 6 minutes. Remove and place in cold water to stop cooking.
Place sprouts into a mixture of flour, salt and pepper, coat well. Remove and place the sprouts into beaten eggs, coat well. Remove and place into bread crumbs and coat well.
Fry the Brussels sprouts in olive oil and garlic for about 10 minutes over medium heat or until a golden brown.
