Zesty Fiesta Short Ribs And Beans

ingredients
3 pounds beef short ribs, cut into 2-inch lengths
1 teaspoon cumin
1 teaspoon cinnamon
1 teaspoon chili powder
1 tablespoon shortening
1 lime, thinly sliced
1 teaspoon salt
1 jar (16 ounce size) chunky style salsa
2 cans (15 ounce size) pinto beans, drained
1/4 cup chopped fresh cilantro or parsley
directions
Preheat oven to 350 degrees. In a small bowl, combine cumin, cinnamon and chili powder. Rub mixture on ribs.
In a large dutch oven, heat shortening over medium high heat. Add ribs and brown thoroughly on all sides. Drain.
Scatter lime slices over browned ribs and season with salt. Pour salsa over ribs and lime slices. Cover and bake for 1 1/2 hours.
Stir in pinto beans and cook, uncovered for 20 minutes or until ribs are tender and beans are hot. Sprinkle with chopped cilantro or parsley before serving.
