Battered shrimp, fried and coated in a sweet garlic-scallion sauce, are irresistible little morsels perfect for serving with steamed rice.

ingredients

1 small egg
6 tablespoons cornstarch
2 cups cooking oil
12 ounces large shrimp, peeled and deveined
1 tablespoon minced scallion
1 tablespoon minced garlic
2 1/2 tablespoons sherry
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon szechuan pepper

directions

Combine the egg and cornstarch in a shallow dish and whisk until smooth.

Heat the oil in a deep skillet to 365 degrees F.

Dip the shrimp into the egg mixture, coating completely and letting any excess drip off. Add the coated shrimp, in small batches, to the hot oil and cook until golden brown. Remove from the oil with a slotted spoon and let drain on paper toweling.

Combine the scallion, garlic, sherry, sugar, salt, and pepper in a skillet over medium heat. Cook, stirring constantly, until heated.

Add the fried shrimp and stir to coat the shrimp in the mixture. Serve the shrimp hot.
