6 boneless, skinless, chicken breast halves
1/2 cup orange juice, fresh squeezed
1 lime juiced
1 tablespoon capers, crushed
1 teaspoon salt
1 teaspoon black pepper, fresh ground
2 tablespoons apple juice
Mix fruit juices, capers, salt and pepper. Place chicken breasts in large glass baking dish, pour mixture over them and cover. Refrigerate 4-12 hours.
Bake at 350 degrees F. Baste as needed with marinade until done and serve.
Note: You may grill these as well.

I served this dish accompanied with mushroom shaped red potatoes, heart shaped beets as well as mashed yellow and butternut squash served in wonton cups at a Valentine's Dinner for over 80 guests. The accolades were out of this world. Everything was extremely delicious and the presentation gracious. This chicken dish is worth keeping.
