1 tablespoon butter
1 pound chicken drumsticks
1 2/3 cup water
6 ounces long-grain white rice
2 cups chopped vegetables such as green beans, peas and/or carrots
herbs and spices of your choice
Heat a large skillet over medium heat. Add the butter and tip the pan to coat the bottom of it with butter as it melts.
When the butter is hot, add the chicken in a single layer. Cover the skillet and cook for 4 minutes. Turn the chicken pieces over, recover the skillet, and cook for 4 more minutes. Remove the chicken to a plate and set aside.
Add the water, rice, vegetables, and any desired seasonings to the skillet. Mix well. Top the rice mixture with the chicken pieces. Bring the liquid to a boil then reduce the heat to a simmer. Cover the skillet and cook for 20-25 minutes or until the chicken is cooked through and the rice has absorbed the liquid.
Remove the pan from the heat and let stand, covered, for 5 minutes before serving.

Really flavourful and tasty!!!
So far so good. Easy to make, simple enough to make as a last minute dinner idea, without having to run to the grocery store. It smells good and looks great! Only thing I'm worried about is the serving sizes and ingredient amounts. We have a huge family, eight of us eating dinner every night, so our meat we buy is always a value package. Without an exact description it's hard to tell how much is correct.Anyways, we will see.
I'm not sure what you're unclear on. There are measurements for all the ingredients except for the seasonings. The recipe, without adjustments, should serve 4 people.

To add even more flavor I add chicken broth in place of water and at the end parmesan cheese on top. It is called chicken risotto at our house. Carole

Incredibly easy! The chicken was tender and the rice was perfectly done. Stir in your favorite veggies and seasonings. I used frozen peas and carrots and dried thyme, a pinch of cumin, and sprinkled paprika on the chicken
