Chicken in Lemon Butter Sauce

ingredients
1/2 cup butter
2 tablespoons fresh lemon juice
1 teaspoon salt
1 clove garlic, minced
1/8 teaspoon black pepper
1/2 teaspoon paprika
1 can (4-6 ounce size) sliced mushrooms, drained
2 tablespoons drained capers
4 chicken breasts cut into bite size pieces
directions
Combine the butter, lemon juice, salt, garlic, black pepper, paprika, mushrooms, and capers in a skillet over medium heat. Bring the mixture to a boil, stirring frequently.
Add the chicken to the skillet and stir well to coat in the sauce. Cover the skillet and let it simmer for 30 minutes or until the chicken is tender. Stir occasionally so the chicken cooks evenly.
Serve hot.

It was a little bland so I added some sea salt and also added some white wine and Parsley. I wouldn't be jumping to make it again but it was very easy and good. Great for a last min meal after a hard days work!
