Pressure Cooker Flank Steak With Dressing

ingredients
2 pounds flank steak
Dressing
3/4 cup sausage meat
1 apple, peeled & sliced
1 1/2 cup dried bread crumbs
1 tablespoon onion, minced
1/4 teaspoon salt
3 tablespoons fat
3/4 cup water
Gravy
2 tablespoons all-purpose flour
1/3 cup water
1 cup boiling stock
directions
Heat sausage in fry pan. Pour off excess fat. Add the remaining stuffing ingredients (not the fat or water).
Trim edges of steak and sprinkle with salt and pepper. Spread dressing over flank steak, roll it up loosely and tie it securely. Brown steak on all sides in fat in pressure cooker.
Add water, cover, set control and cook for 35 minutes after control jiggles. Cool cooker normally for 5 minutes and then place under faucet. Thicken gravy.
GRAVY: Blend flour with water until smooth. Gradually stir into boiling stock, stirring constantly. Cook over medium heat, stirring, until gravy is smooth and thickened.

Never grilled, sauteed, microwaved with flank steak but I love to use my stovetop pressure cooker so this recipe was meant for me to try. Wow! So delish! So flavorful! I followed the recipe but due to diet concerns changed the filling to a bread crumbs, onion and celery mix but never mind. My guests did not want to wait for me to take a picure the aroma was so yummy. Definitely a keeper. Thanks for posting this recipe.
