Easy Salisbury Steak

1 pound ground beef
1/3 cup herb seasoned stuffing, crushed
2 tablespoons finely chopped onion
1 egg, beaten
1 tablespoon vegetable oil
1 can (10.25 ounce size) beef gravy
1 jar (4.5 ounce size) sliced mushrooms, drained (optional)
4 cups hot mashed potatoes
Mix thoroughly beef, stuffing, onion and egg. Shape firmly into patties, 1/2" thick.
Heat oil in skillet. Add patties and cook until browned. Pour off fat. Add gravy and mushrooms. Heat to a boil. Cover and cook over low heat 5 minutes or until done. Serve with potatoes.
