Who says you can't enjoy Salisbury steak on a diet? This low-fat version is here to change the game, one lean, savory patty at a time.
8 ounces ground turkey (90% lean) or extra-lean ground beef
14 low-sodium saltine crackers, crushed
1/4 cup fat-free milk
1 teaspoon minced dried onion
1 teaspoon dried parsley
1 jar (12 ounce size) fat-free beef gravy
2 tablespoons reduced-sodium ketchup or regular ketchup
2 teaspoons Worcestershire sauce
1/4 teaspoon black pepper (or to taste)
Preheat the oven to 350 degrees F. Grease a 2-quart square baking dish.
Combine the ground turkey, crackers, milk, onion, and parsley flakes in a bowl. Mix enough to combine but do not over work the meat. Form the mixture into patties and place them in a single layer in the greased baking dish.
In another bowl, stir together the gravy, ketchup, Worcestershire sauce, and pepper. Spoon the sauce evenly over the salisbury steak patties.
Cover the baking dish with foil and place in the oven. Bake at 350 degrees F for 1 hour or until the salisbury steaks are cooked through.
Serve the salisbury steaks with the gravy over noodles, rice, or mashed potatoes.
For a richer flavor, consider sauteing some mushrooms and onions and adding them to the gravy.
If the gravy seems too thick, thin it with a little water or more beef broth.
Experiment with herbs and spices in the meat mixture for different flavors, such as adding a bit of garlic powder or smoked paprika.
Leftovers can be stored in the refrigerator for up to 3 days and are great for a quick and easy meal.
Yes, you can use whole wheat crackers or breadcrumbs as a substitute. They serve as a binder and add texture to the patties.
Yes, you can cook them in a skillet over medium heat. Brown the patties on both sides and then add the sauce, covering and simmering until they are cooked through.
Avoid over-mixing the meat mixture, as this can make the patties tough and more likely to fall apart. Also, make sure the patties are firmly shaped but not overly compressed.
Yes, you can prepare the patties and sauce ahead of time and refrigerate them until ready to bake. This can actually help the flavors meld together more.
The internal temperature of the patties should reach 165 degrees F to make sure they are fully cooked, especially when using ground turkey.

This recipe is great. My wife and I both are on a diet but wanted "real" food to eat. This is low-fat, easy and really good. Because I served it with brown rice, I doubled the fat-free gravy portion for extra sauce.
