Cod Baked In Tomatoes and Cilantro

ingredients
1 1/2 pound cod fillets
4 plum tomatoes, chopped
1 tablespoon extra-virgin olive oil
1 cup cilantro, roughly chopped
1/2 cup chopped red onion
1/2 teaspoon salt
directions
Preheat the oven to 400 degrees F. Coat a baking dish large enough to hold the cod fillets in a single layer with cooking spray.
Combine the tomatoes, oil, cilantro, onion and salt in a bowl. Pour the tomato mixture over cod and place the baking dish in the middle of the oven. Bake for 20 minutes, occasionally spooning the pan liquid over the tomatoes on top. Test for doneness by gently prying apart the thickest part of the fish with a fork. The fish should be opaque.

I made this dish with a hothouse tomato and 1 piece of cod and no oil. It was yummy with brown wild grain rice with cranberries, raisins and steamed shanghai bok choy. Thanks!!

This dish was excellent! I only just sprinkled the Cod with a little bit of lemon pepper and added a few drops of lime juice before baking. GREAT flavor and HEALTHY! Will make this again for sure!
