The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

ingredients
6 baby red or white potatoes, washed and thinly sliced
6 baby artichokes, trimmed and quartered
4 tablespoons extra virgin olive oil, divided
3 cloves garlic, minced
1/4 cup chopped fresh Italian parsley
10 ounces cod fillet
directions
Preheat oven to 425 degrees F.
Toss potatoes and artichokes with 3 tablespoons oil, garlic and parsley. Season with salt and pepper. Place in center of a sheet of heavy duty aluminum foil (18- x 28-inches).
Place fish on top of potatoes. Drizzle with remaining oil and season with salt and pepper. Seal edges of foil and place packet on baking sheet. Bake for 30 minutes.
Carefully cut packet open with small sharp knife and transfer contents to dinner plates.
