Greek Beef And Couscous

ingredients
1 tablespoon olive or vegetable oil
1 pound beef boneless sirloin, cut into 1" pieces
1 medium onion, chopped
2 cloves garlic, finely chopped
1 1/2 cup beef broth
3/4 cup uncooked couscous
5 Roma tomatoes, coarsely chopped
2 tablespoons chopped fresh oregano
OR
2 teaspoons dried oregano leaves
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese
directions
Heat oil in 10" skillet over medium high heat. Cook beef, onion and garlic in oil, stirring occasionally, until beef is brown.
Stir in broth; heat to boiling. Stir in couscous, tomatoes, oregano and pepper; remove from heat.
Cover and let stand about 5 minutes or until liquid is absorbed. Top with cheese.
