There's something magical about a slow-cooked meal after a long day, and these easy beef shanks do exactly that, transforming meat and some pantry staples into a comforting creation.

cooking oil, as needed
2 meaty beef shanks
1 envelope dry onion soup mix
1 can (15 ounce size) diced tomatoes, drained
Heat a skillet over medium-high heat. Add enough oil to just lightly coat the bottom of the skillet. Add the beef shanks and brown on all sides. Place the browned shanks in the crock pot.
Sprinkle the shanks with the onion soup mix then top with the diced tomatoes.
Cover the crock pot and cook on low heat for 6 hours or until the shanks are very tender. Serve the shanks with the savory tomato sauce.

We love this recipe and it's so easy. I don't change a thing. The onion soup mix and tomatoes balance out the flavors perfectly. I serve it over mashed potatoes. YUM!

needed to add a can of french onion soup to cut down on the tomato flavor, also added sliced mushrooms for flavor and bulk.
