Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.
Apple Squash Bread

ingredients
1/3 cup canola oil
1/2 cup brown sugar
1/2 cup egg substitute
1 package (12 ounce size) frozen winter squash
1 teaspoon orange zest
3 cups reduced fat biscuit baking mix
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
2 large apples, peeled cored and cubed
nonstick cooking spray
directions
In a medium mixing bowl, beat together the oil, sugar, egg substitute, winter squash and orange zest until light and fluffy.
In another mixing bowl, combine biscuit mix and spices in large mixing bowl. Stir in squash mixture. Fold in apple chunks.
Pour into a 3- x 5- x 9-inch loaf pan greased with cooking spray. Bake at 375 degrees F for 60 to 65 minutes or until cake tester inserted into center comes out clean.
Remove from pan and cool on wire rack.
