This homemade apple bread is delicious simply eaten with a spread, toasted, or used in recipes like French toast or bread pudding.
2 cups sugar
3/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
2 cups flour
1 1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 cups apples, peeled and diced
1 1/2 cup chopped walnuts
Preheat oven to 350 degrees F. Grease and lightly flour two loaf pans.
Combine the sugar, oil, eggs, and vanilla in a large mixing bowl. Whisk well.
In another bowl, combine the flour, cinnamon, nutmeg, baking powder, baking soda, and salt
While stirring, add the flour mixture to the egg mixture and stir until just combined. Do not overmix. Stir in the apples and walnuts.
Pour the batter into the prepared loaf pans. Place in the oven and bake at 350 degrees F for 55-65 minutes or until set in the middle.
Remove from the oven and let cool in the pans for 5-10 minutes then turn out to a wire rack and let cool completely before slicing and storing. Store in an airtight container. This bread freezes well.

Well, mine didn't look anything like the picture. There were way too many fresh apples for the batter. It tastes fine but I serve it by cutting off a chunk of the bread and eating it with a fork, almost like a spoon bread. I did use both brown and white sugar (half and half) but cut down on the total amount to a cup and two thirds which was still plenty sweet for me. Will try the recipe again because it did taste good. A baking friend suggested shredding the apples...

Just made this recipe. It is an extremely delicious. I used delicious apples and I am sure granny smith, winesap other cooking apples would be just as good! Hats off to this recipe.
