1 1/2 cup uncooked rolled oats
1 1/2 cup flour
1 1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
3/4 teaspoon ground allspice
1/2 cup honey
1/2 cup milk
1/4 cup corn oil
3 egg whites, at room temp
3 cooking apples, diced

directions

In a large bowl, mix oats, flour, baking soda, cinnamon, and allspice. In a small bowl, beat honey, milk, oil, and egg whites. Stir into flour mixture just until moistened. Fold in apples.

Spread in loaf pan coated with nonstick vegetable cooking spray. Bake at 350 degrees F for about 65 minutes.

Cool in pan on wire rack for 10 minutes and remove bread from pan. Cool on wire rack.

    I used canola oil and it seemed to work fine. definitely will use more cinnamon and spices next time, and DEFINITELY needs salt (but in the event you forget salt, some salted butter on a warm slice is pretty delicious.)

    I made this for my toddler so I ground the oats first in the food processor. I left out the allspice and added 1/2 tsp. of salt (missing in recipe). Used sunflower seed oil instead of corn oil, didn't make any difference. Used 2 whole eggs instead of 3 egg whites. To answer another reader, I would imagine that the reason for the egg whites has to do with the use of honey, as honey makes it heavy. I used 2 large fuji apples, chopped in food processor. Turned out very nice for baby, but needed a lot of cooking time. Next time I'll use a cake pan instead bcuz with a loaf pan it stays too moist inside.

    Very quick and easy to make. I like that it is relatively nutritious as well. I would increase the cinnamon for next time but otherwise very good!

    I've been using this recipe for a while now. I've been using brown sugar instead of honey and i also add some chocolate chips to the mix. It taste so good!

    Going to try this recipe this week but just wondered why the recipe uses just the whites of the eggs? İs it to reduce the fat content? İ don't like the idea of having 3 yolks left over so would it work with 2 full eggs instead do you think?

    I believe the recipe tells you to bake the bread too long. Try baking it for less than 60 minutes.

    Simple, easy, and healthy. Very yummy. Try cooking for 55-60 min. first and test for doneness. Easy to overcook. Also, dice apples into very small pieces or the bread will not stay together when sliced.
