Croissant Breakfast Bake

ingredients
8 ounces Canadian bacon or sausage, cooked and chopped
1 package croissant rolls
2 cups shredded cheddar cheese
4 eggs
3/4 cup milk
1 onion, chopped
1 green bell pepper, chopped (optional)
directions
Spray 3 quart casserole dish with cooking spray. Layer croissants in bottom and on sides of dish. Put bacon or sausage and then green pepper over the croissant crust. Beat eggs; add milk, onions, and cheese. Mix well and pour egg mixture over meat.
Bake at 350 degrees F for 30 minutes. May be put together and left in refrigerator overnight and baked the next morning.
