Cheesy Egg and Spinach Casserole

ingredients
1 pound bulk sausage
1 jar (4 ounces) chopped pimiento, drained, divided
1 box (10 ounces) frozen chopped spinach, thawed and drained
1 cup all-purpose flour
1/4 cup Parmesan cheese
1/4 cup minced onion
1 1/2 teaspoon Italian seasoning
1/2 teaspoon seasoned salt
8 eggs
2 cups milk
1 cup shredded cheddar cheese
directions
Cook sausage and drain. Sprinkle in bottom of greased 9x13-inch baking pan. Top with 1/2 jar pimento and spinach.
In small bowl, combine flour, Parmesan cheese, onion, Italian seasoning, and seasoned salt.
In a large bowl, beat eggs and milk. Add flour mixture to eggs and beat well. Pour over spinach and bake in 425 degrees F oven 20 to 25 minutes or until set.
Top with remaining pimento and Cheddar cheese. Bake 2 to 3 more minutes or until cheese melts. Cut into squares.
