Breakfast Casserole
INGREDIENTS:
12 eggs, beaten
14 slices bread
2 1/4 cups milk
2 1/2 cups Cheddar or Monterey Jack cheese, shredded
1 pound sausage, cooked and drained
1/2 teaspoon salt
1 teaspoon ground black pepper, or to taste
2 teaspoons prepared yellow mustard, optional
DIRECTIONS:
Grease the sides of the crock pot with butter.
If desired, spread mustard on one side of the bread and cut bread into large squares.
Make layers in the crock pot of bread, followed by sausage, followed by cheese, ending with a cheese layer.
Beat eggs, milk, salt and pepper together. Pour over crock pot mixture.
Cover and cook on LOW heat setting for 8 to 12 hours.
NUTRITION:
605 calories, 40 grams fat, 27 grams carbohydrates, 32 grams protein per serving.

i brought this to work for a potluck and it was way overdone, we ate the middle out of it and it was really good, what we could eat. i'll make it again but prob try 3-4 hours instead.
CDKitchen Note: Certain models of newer crockpots (last 5 years or so) overcook foods so most recipes you'll find online need to be adjusted occasionally. It's a shame the manufacturers won't fix their product to work the way the rest of the slow cookers operate.

We made this recipe as-is, with the exception of mixing spicy brown mustard into the egg mix instead of putting onto the bread slices. This smells wonderful while it's cooking--it actually woke me up--but 8-12 hrs is WAAAAY too long for this dish! We have the large circular WestBend crockpot, and after 7 hrs on low, we had to cut the burned edges off, scrape out what we could from the inside, chop it up in a separate dish and add lots of extra cheese before serving. It seemed that we might have done better just making a do-ahead strata and baking it that morning. The flavor of this recipe is good, but the cooking time really needs to be adju... read more
