Get a little taste of the islands with this delicious breakfast omelet. This omelette has a filling made with pineapple, ham, and Monterey Jack and Cheddar cheeses.
6 eggs
1/2 cup small pineapple chunks
1/2 cup cubed ham
1/2 cup Monterey jack cheese
1/2 cup Cheddar cheese
6 tablespoons water
salt and pepper, to taste
Beat together eggs, water, salt and pepper.
Thinly coat your skillet with vegetable oil spray. Heat over medium high.
Pour egg mixture into pan. When eggs are almost set, sprinkle half of the omelette with remaining ingredients.
Fold other half of omelette over filling. Continue cooking until cheese melts, about 2 minutes.
Cut omelette into 3 wedges and serve.

I usually don't like omelets but we had this for breakfast this weekend and it was really good!

At first I was skeptical of pineapple in an omelet but this was really great! The flavors all worked together wonderfully and the suggested cheeses went great with it. Loved it!
