Switch up your breakfast routine with an easy frittata. Cooked Canadian bacon is mixed with eggs and Parmesan cheese in a skillet and put under the broiler until perfectly done.

ingredients
1 cup finely chopped Canadian bacon 6 eggs 6 tablespoons Parmesan cheese salt and pepper, to taste 1 tablespoon butter

Preheat broiler.
Heat a small skillet over medium heat. Add the chopped Canadian bacon and cook, stirring, until it just starts to soften and the edges curl a bit. Do not let it cook until it is crisp.
Remove the Canadian bacon and place in a bowl. Add the eggs, Parmesan, salt and pepper to the bowl and mix with a whisk until blended.
Heat a 12-inch ovenproof nonstick skillet over medium heat. Add the butter and as soon as it starts to foam, add the egg mixture to the pan. Turn the heat to low.
Let the eggs cook on low heat until they have set but are still creamy-moist in the middle. Place the pan under the broiler and let cook just long enough to set in the middle.
Remove pan from oven and cut the frittata into wedges to serve.

A very easy frittata recipe. The Canadian bacon adds enough flavor that you don't need much else. It's a very satisfying breakfast!
