A baked version of the classic Denver omelet made with eggs, cheese, ham, bell pepper, and onion.
8 eggs
1/2 cup heavy cream
1 cup shredded cheddar cheese
1 cup finely chopped fully cooked ham
1/4 finely chopped green bell pepper
1/4 cup chopped onion
Preheat the oven to 400 degrees F. Grease a 9x9 baking pan.
In a bowl, whisk together the eggs and cream until light and fluffy and uniform in color. Stir in the cheese, ham, bell pepper, and onion. Mix well.
Pour the egg batter into the prepared baking pan. Place the pan in the oven and bake at 400 degrees F for 25 minutes or until the omelet is firm and light golden brown.
Remove from the oven and cut into squares. Serve immediately.

Very good flavor and easy to make. I substituted banana peppers out of the garden for the bell pepper. I will definitely prepare this recipe again.

I've always enjoyed Denver omelets and this baked version was a nice change. It was simple to make and it turned out delicious. I did scale it down (in half) and baked it in a smaller baking dish for slightly less time.
