No-Fail Fluffy Omelette

Make the perfect omelet every time with this tried and true technique. Add fillings as desired such as chopped ham, sauteed veggies, and cheese.

ingredients

3 eggs
1 teaspoon water
1 tablespoon butter
1/2 teaspoon oil

directions

Combine the eggs and water in a bowl and whisk just enough to combine them. Do not over beat the eggs. Season as desired with salt and pepper.

Combine the butter and oil in a non-stick skillet over medium heat. Turn to coat the bottom of the skillet with the butter mixture.

Pour the egg into the skillet and tilt the pan gently to cover the bottom of the skillet with the egg. Let the egg cook for 3-5 seconds then gently draw the sides of the omelette into the center using a spatula. Let any excess egg run out to the sides.

When the egg is almost set, add any desired fillings (such as cheese, ham, mushrooms, etc), tilt the pan at a 45 degree angle and fold one half of the omelette over the other. Gently slide the omelette out onto a plate and serve immediately. The egg will continue to cook so it's ok that it's still a bit "eggy".

    I've never liked my own omelets because they never end up being fluffy like restaurants make them. This turned out perfect! I guess I've been over beating the eggs when I make them. I filled the omelet with sauteed onion, mushrooms, jalapenos, and sliced sausage. Wonderful breakfast!
